Royal Siberian Caviar is produced from the Siberian sturgeon species (Acipenser baerii). The Siberian sturgeon may not be as well known as the Russian Osetra, but don’t let this fact deter you. Some connoisseurs even favor the Siberian’s more complex sweet taste and fruity flavors with a hint of the sea. The pearl size of this light-to-dark-gray caviar is small and the texture is delicate, practically melting in your mouth.
